The Simple things in Life.

The finer things in life are the Simple things in life. Today my greatest gift was time just talking, listening and hugging my family. My wonderful Kate came and did the groceries with/for me. Who would believe what gems can come from grocery shopping. We have the most eclectic range of conversation, that is what makes it so precious. This time between childhood and young adult is proving to be such an enjoyable and humbling time. It is such an awkward time in life, but thankfully it is proving to be fruitful for both of us and our relationship.





It is a school holiday treat to get John West Prawns and cocktail sauce and just sit and chat. And boy did we do that. The sauce is not on our diet, but the $5 special price worked for our budget, we enjoyed them immensely. It's these moments that make the hard parenting days all worth it. I am so blessed to have such a sensible and level headed Daughter. Yes she is human and does have her days :)  I think this holiday treat is made so much more valuable because it will be Kate's last school holiday, as of the 14th of November she will no longer be a High School Student. Yes I am scared but excited for her and us. If our 4 Littlie's are half as much pleasure as Kate is, we will be very proud parents.






We had the blessing with meeting up with a family friend who we met before Kate was born. She is such a good lady and always delights in catching with us all. It is so lovely tracing important events and moments with family and friends, it is like playing the highlights of the "All time Best Movies". Can I tell you that the stars of our movies, have the most beautiful faces and hearts that light up the world. That is worth so much more than any THING or Oscar.

It's a Sinch




 Today didn't start to well and the sky wasn't the only cloudy outlook. The healthy walking is making life harder in the morning, it really  is pleasure beside the pain in the afternoon. The 4 Littlie's and I enjoy getting out, seeing the sights, dodging the Magpies and challenging their cycling and skateboarding skills. My slow start this morning, somehow happened upon hurting my spinal fusion - gees thats a pain that nobody needs to know about. I will admit I sooked around on the lounge until the smarting stopped. My good friend Rochelle gave me the boost I needed. Thank you Rochelle.





When I got organised it was a Sinch, I processed some oranges I had bought to make Orange jelly Sinchies. There was enough to make a 1L smoothie starter for the next lot of smoothie Sinchie's, jelly lollies for the Lovelie's, some orange ice cubes for drinks and smoothies and 2 small jelly cups for Kate to eat at work. Can I share with you what has made packing the Sinchie's easier, is that Green watering jug. I paid $2 at Overflow and it fits perfectly in the 80ml Sinchie's which I found hard to fill last time with thick smoothies, this time it was a breeze.







I love Pinterest not only is it better screen time than TV, but it saves you money. We had 5 dodgy bananas that were begging to become muffins. Pinterest came to the rescue with a "Great it's a Sinch SCD recipe" for Banana Muffins. I made a double batch as I often do and 46 muffins but could have got 48 if some of the first ones we just a tiny bit smaller, so a generous recipe. The Lovelie's were wrapped in these muffins, and all commented on how huge they were. These will be packed, frozen and ready for lunches. Pinterest has made the Specific Carbohydrate Diet doable and even easy at times. If there is something challenging you in life, do a simple search on Pinterest and see how someone else has given it ago or perfected it.




 Even though though pain seems insumountable, I try to push past it. Today is an example of what subscribing to Flylady can help you get through. I love the concept of "You can do anything for 15mins", some days in this house it's "You can do anything for 5mins sometimes 2mins". If you find housework, organisaion, clutter, just getting yourself together difficult, have a look at Flylady getting started. I have been getting the emails for about 18mths, most days I delete them and have things together and on track. The other days I wake up in pain, unmotivated or just lethargic, I read the emails and get my mojo back. The premise of Flylady, is to start daily routines to help you get organised and manage everything in your life a little bite at a time. This is something we all find hard at times, but the tools, email support and general system helps keep life a lot calmer. Having 5 children, 4 of them within 3 1/2yrs and very unwell, I had to be organised or this boat would've sunk. The stress and anxiety from Illness, Hospitals, Doctors, Therapies, exhaustion and just simply not enough hours in the day became almost unbearable. I read in a thread on Simplesavings about Flylady, it sounded a bit airy fairy for me, after a couple of months of emails I saw the light. I honestly wished I had known about the website all the way back when I was a young working Mum with 1 sick child, let alone 5. I seem to get it together and lose it again, then get back into the system, that said I need the reminders "Not to sweat the small stuff."

Team Giggle - Many hands make light work.

Today, was a slow start in our house, the Littlie's were off for their first day at Holiday care. We were supposed to be gearing up for a big day cooking. We like to stay proactive in all of our cooking, cleaning, planning and organisation, because so much happens so quickly here. Better 2 steps ahead than behind. My idea is to get the Lunches, Breads, Treats and some meals for the first couple of weeks of term prepared with little pressure, while we aren't tied to a schedule.

Mine and Kate's body weren't in on the program, they didn't want to get to it and cook. Some days cooking seems to flow easily and today just didn't seem to be one of those. Kate, did a great job with  Vanilla Cupcakes  and then measuring and sorting things for me - Read Hugemongeous Help :) We started with CSD Monster Cookies (Page 132 BREAKING THE VICIOUS CYCLE).  This is the families favourite CSD recipe, they are very tasting cooked and uncooked. Because of pain and frugality, I measure each cookie to either 1 or 11/2tablespoon of mixture. A double batch mixed, it took me a while to make all the cookies.

 Kate, took on the task of measuring the ingredients for 6 loaves of bread. This sounds all very boring and usual, except we were both so lethargic we were in fits of giggles. Neither of us seemed to get far without a pun, bad joke or just in stitches laughing. Children really are a gift from God, to make life fun. These days are fantastic because they bring around some very successful recipes, the problem is that we forget to document what we do and how to get this great result again. ooops.

The families favourite bread recipe would be the Cheese Bread recipe 
 (Page 122 BREAKING THE VICIOUS CYCLE). This recipe is so versatile because we make them in batches of 2 or 3. It makes great Garlic or Herb bread and incredible pizza bases. Today we were trying a substitution to try and find "Our elusive Unicorn" aka Dad's Bread for Crispy Toast. The substitution of half of the almond meal for Sunflour. Kate ground the Sunflour for me from sunflower seeds. I will let you know that it got an "Alright " from Dad, which is better than we have had in a while. Most people comment that they miss the crispiness of a normal diet when they embark on the Specific Carbohydrate Diet. 


Almond Sunflour Cheese Bread

You will see in the Vanilla Cupcake and Monster Cookie photo above, that they are packaged and frozen in the amounts needed. We do this with all regularly consumed foods, eg Diced Chicken breast for Breakfast, Lunches etc. Also ready to through in the frypan with diced onions and various vegies instead of takeaway. This quick go to rescue meal is prepared, cooked and on the table before either of us could get back from some unhealthy takeaway.Not only does it work for our bodies, it works for our budget. All lunch snacks, treats and breads are cooked, divided/sliced and in single serves. So if there was an emergency the Lovelie's could make their own lunches, just by pulling a few packages out and putting them in their lunch boxes. Bread would be defrosted and topped with cold meat, or any of the other homemade spreads. You will also note that the homemade mince is packed in snaplock bags, these are weighed, sealed and frozen flat, then neatened in containers. The chicken breast packages are a bit messy at the moment, Ross prepared them on the weekend for us, the container is missing in action.lol. These are in the side by side fridge freezer, for every day use anything that is for more than a fortnight ahead, is kept in the Chest freezer. The chest freezer has all bulk cooking supplies, bulk baking, nuts, etc.



Although we didn't get a lot of food preparation we did get a lot of Love, fun, giggles and some food preparation done. I find sitting at the bench doing while we are talking, joking or remembering very rewarding. We are very proud of Kate and all that she is and has achieved, in her last months of High School this Mum doesn't want to admit her little Girl is growing up. I would love to hope that we will be sitting at the bench for many more years talking, remembering, laughing and loving. It is these interactions that takes so much pain out of my day and lightens the load. Laughter is the best medicine.

As part of my getting back to healthy, happy and more mobile I have been walking each afternoon. It is funny I love the exercise, the time out of the house but it isn't helping my pain. I've always forgetten why I don't walk anymore, it is the nerve damage from my recent spinal surgery. It seems silly that someone would forget why they walk, this new pain is more horrific than any I have had and these new lows aren't my idea of fun. The kids and I are having a ball on our adventures and spring in Queensland are heavenly. We are lucky enough to have Grandma come on our adventures sometimes. So worth the horrific pain.

This must have sounded like fun because the Lovelie's were chomping at the bit a 1pm instead of our normal 4pm. It really wasn't hard to prepare for, camera each, water bottle, bag, scavenge hunt list, felt pen and whatever means of transport you like. Do our Lovelie's have a camera each, no.

Last year for Christmas, the four Littlie's received a cheap Android phone each, yes very cheap and out of date Android phone. The reasoning was that the cheap phone had - Alarm (Organisation), Camera (Many positives) MP3 (Music with good storage), Video (Special Memories), Games (Free Educational Android Games), Email (Not used but they have their own for the future), Notepad (Job lists, Messages etc) and the main reason is for car trips and the long medical appointments which we endure in most months. I don't think for $20 anyone could say they were  a ridiculous purchase. They are only used on school holidays and medical appointments. Much cheaper than any PSP, Game boy etc.

This scavenge hunt was a perfect opportunity to use the kids phone, explore our local area and get out in the fresh air, perfect spring afternoon and exercise. We are so blessed that getting out on Scooters, Bikes and Skateboards are considered a hugely fun activity by our 4 Littlie's. Yes Kateleigh, took a little convincing but she did join in and then enjoy herself.

It was so lovely to see that when the Lovelie's had to take photo's on Something Special or Something You Love they all took photo's of each other, the 7 of us or Grandma and I. 

This is an activity I would recommend to every family, it is fun, exciting and brings many special unexpected Joys.

Starting afresh - School holiday, SCD, CSID and Me

Our world is a never ending juggle of Joy, Love, Food, Fun and Lovelie's. With 7 in our household, there seems to be a constant flow of chaos with that joy and fun. Because of the genetic disorder CSID Congenital Sucrase Isomaltase Deficiency, keeping everyone healthy, fed and happy is a little more difficult.

I guess the reason I am posting is to stay sane, and maybe help anyone  who is or has a family member diagnosed and has no idea where to start. It has been 4 years since diagnosis, but many decades fighting the symptoms. It has also taken us 4 years of diet finding, tweaking and organisation honing to get us to this pretty good place. I wished on those dark nights I was worrying about many different problems, that I could have found someone who had been through something similar.

All food here is made at home and there is very little processed foods in the house, so cooking is a constant. battle. We follow the Specific Carbohydrate Diet SCD which is a monocarbohydrate diet that has improved our health and given us a new lease on life. Along with the lease on life  SCD gives you a lot more work.

I have spinal injuries that have been part of my life since I was 12. So this workload is shared between us all with the majority of it landing on my wonderful Husband and I. To make it all happen there is a lot of time and pain management, organisation, furniture placement and bulk cooking. Neither of us, overly enjoy cooking but sick or complaining children aren't that attractive either.
School Holidays, to me is a great time to get organised for the next school term and get proactive in anything that I can. As a reward for good behaviour and sticking with their diet, the four Littlie's asked to go to a School Holiday program. This will give us time to get some of those tasks ahead. Here is my School holiday list:
